      I actually used McCormick Montreal steak seasoning :) but I think salt and pepper would work out just fine 👍

    As a European seeing this, why do so many not like this. We use paper bags with an aluminum inner isolation layer (it doesn't leak). The pastic containers I've seen on the internet which were used before looked flimsy. And if you want to reheat, you should be using a microwaveable container anyway, like glass or some plastics.

    How is the charcoal/fire door working out? also do you prefer to use the concrete paver or the bricks you have used in other videos?

      The fire door is great! Getting ready to post the video for that. The paver works pretty good as a heat diffuser over the charcoal basket. Technically it should probably be some kind of fire brick or clay brick. I think I've heard that moisture trapped in concrete pavers can cause them to explode in extreme heat. I've never had that problem though 🤷

    How did you increase the temperature for hot and fast? did you just omit the heat deflector (concrete paver) and keep the vents open?

    This may have already been addressed but you don’t need high temp paint. Most water based regular grade paint is rated up to 500 degrees. Not necessary to remove the original paint since you didn’t do any welding on the barrel.

      Good chance it would have been fine 👍 I have definitely exceeded 500° when making pizza though.

    Why are you doing it on the top grate?

      Well once it's lit I lift the side charcoal hinge and dump it down to the lower grate. Works out fine for indirect.... But if I was doing direct heat grilling i'd remove the top grate before dumping it in :)

    Bad idea! Chicken will fall apart. Bags have more solvents. It is a big deal and not fine!

    How long should you let it heat up before you dump the coals

      It depends on what you're doing.... But I mostly go by eye. If I'm smoking meats I'll usually go until the briquettes are like half lit. If grilling I'll go until they are pretty much fully lit. Probably averages like 15 minutes.

    I was looking for a Weber lid for weeks and never could find one thrown out with trash but I did buy the weber cooking grid plus I have been using with outer paint and still haven't gotten hot enough to burn paint off so If you want to dive right In you can just clean Inside out. I like the draft door and the charcoal basket. I have a drum lid with a Weber handle and gas grill temp gauge, all and all about a $100.00.

      No flare ups! :) I don't put the chicken directly over the coals. I'll often put a fully lit charcoal basket on each side of the grill, with the chicken in the middle.

    Do you need a water pan ?. And do you get any grease fires while not using a water pan ?.

      I don't typically use a water pan. I'll sometimes use a big concrete paver as a heat diffuser. I haven't had any grease fires in this smoker :) I think most of the grease just burns up gradually as it falls into the hot coals.

      @@localherobbq I had to ask , because all the barrel smokers I’ve seen in stores don’t have a water pan . The way you built your drum is by far the best I’ve seen . I think I’m going to copy the way you built the drum smoker . Especially putting 2 racks on it .

      @@superb9151 thank you very much! This is still the main grill/smoker I use. It's been great and versatile. I'd recommend placing some clay bricks or fire bricks between the bottom of the barrel and the fire basket. The bottom of the barrel can get hot enough to burn a wood deck if the charcoal basket is placed directly on the bottom.

With the fire door I've since switched to this charcoal basket amzn.to/3S5cCaj which I've found easier to manage than the huge one I built in this video.
